Coconut Oil BBQ, In your Kitchen & Gluten Free!

Many people do not believe that you can eat something that is fun and tastes delicious, while in fact staying healthy. Well here is a great recipe for a BBQ night (minus the BBQ and the hassle). You can go right ahead and make this any season! Why? Because it can be done in your kitchen. It’s all about the ingredients and the YUM factor.

Ingredients: Serving size 2 (adjust accordingly if serving more)

1 whole boneless chicken breast (cut in half lengthwise where you see the split)

6 iceberg lettuce leaves from a head of lettuce

2 Potatoes (Idaho, Russet, “normal ones”whatever you want to call them)

Extra Virgin Coconut Oil

Olive Oil

Annies Original BBQ sauce (Gluten Free, Organic)

Swiss Cheese (we got 365 brand from whole foods, no hormones)

2 slices of tomato (one slice for each person)

Bubbies bread & butter pickle slices (optional)

Directions: Preheat oven to 385 degrees. Smooth a very thin layer of coconut oil on 2 separate cookie sheets (one for the chicken and one for potatoes/fries). Reminder that a little coconut oil goes a LONG way. Since the potatoes take a touch longer to cook, we will start with them. Wash both potatoes. Leave the skin on. Just start cutting into long french fry shapes. no need to measure, just chop away to the size you want them to be. Thin, thick, either way, so good! Put all of the fries on your first cookie sheet layered in coconut oil. Use a cooking brush to lightly brush a little olive oil on top of the fries. Add salt and pepper and into the oven they go. Next, place the 2 pieces of raw chicken over the coconut oil on the other cookie sheet. Hint: in addition to the coconut oil used on the tray, add a dab under each piece of chicken to keep the chicken moist and flavorful). Next paint the gluten free BBQ sauce on each piece of chicken with a cooking brush or simply use a spatula. Whatever you have to work with will do! Place tray in the oven. Keep your eye on the chicken. Ours took about 20-25 minutes, but all ovens vary in temps, so please keep this in mind. Same for the fries, some cook faster than others dependent on thickness. Once all is cooked put each piece of chicken in about 3 lettuce leaves which serves as lettuce bun. If needed sprinkle a little more salt to fries. Tomato slice, some pickles and swiss cheese topped on the sandwich to make the absolute perfect bite with every bite. Additional BBQ sauce can be used to dip the fries of course!
