One of the best things you can do with coconut oil is to cook with it. Many people use olive oil for cooking, while olive oil is a amazingly healthy fat, it typically turns toxic and rancid when you cook with it as it has a very low smoke point. Coconut oil on the other hand has a very high smoke point, so you can cook with it without the loss of nutrients and without the risk of it turning toxic.
For this recipe, I use extra virgin coconut oil as the cooking oil, a little garlic, a little sesame / ginger, and then cook for a short time, put on some salad, and add some olive oil and pepper after the fact.
