by juliane kania – This quick recipe only calls for a few items and just about half an hour of your time (3 mins of prep, the rest is oven time) and let’s not forget….it tastes delicious. Yummy “cheesy tomatoes” can be used for a side dish or an appetizer. We chose to use daiya dairy free cheese instead of shredded mozzarella. I for one am a total cheese head. Love the cheese!! My point is, that daiya really does taste like cheese. So those of you who prefer a dairy free diet, here is your answer. Those of you who want to use shredded mozzarella, that is fine as well. Another idea; If entertaining you can use grape and/or cherry tomatoes and toothpicks to pick them up. We used 2 large ripe tomatoes (serves 4) for a magnificent side dish. Follow our instructions below and I promise you will likey .
2 large ripe tomatoes, sliced in half
Daiya mozzarella cheese
1 tablespoon of coconut oil
4 tablespoons extra virgin olive oil
lemon pepper to taste
Directions
On an oven safe cooking sheet, smear coconut oil and then add the tomato halves. Next, drizzle each tomato half with olive oil. Sprinkle daiya cheese on top of each half and season with lemon pepper.
Heat oven to 350 degrees. Bake for 25 to 30 minutes, checking occasionally. Once you remove tray from oven, sprinkle a little more lemon pepper and/or fresh pepper while they cool. Enjoy!!
