Coconut Oil recipes: Baked yams with herbs and spices.

Here’s a quick recipe and easy way to get some coconut oil into your diet. This is one of my favorite meals, and its completely easy to make. First, start with slicing some yams up in the shape of chips, slice them as thick as you like, depending on how you like them cooked. The thicker they are, the longer you will need to bake them but the richer they will turn out. Yams are an awesome source of Vitamin C, Maganese, Potassium and its a good fiber. You can see in the picture above, I have out lemon pepper, garlic, black pepper, Trader Joe’s extra virgin coconut oil, and paprika. I love adding all the spices on their, and of course, the most essential extra virgin coconut oil, but really, in terms of spices, you can go with whatever you enjoy. The great thing about the yams is that once baked, they take on a hint of candy-esq taste, so the addition of salt, or spice, is a really exciting combination. I add everything you see above, and place them on top of foil on a baking pan.

I heat the oven at 350 degrees, and as these are pretty thinly sliced, I leave them in there for about 10 minutes. Really, this is all a matter of taste and texture, I actually enjoy cooking them even longer at times and getting that “chip” texture to them. Even little burned pieces are pretty good.

That’s the finished product. Super simple, taste amazing, very healthy. The coconut oil fat and the yam’s natural health profile make for a really good glycemic experience…because its all about the blood sugar.
